Garlic Roasted Carrots

24 baby carrots

2 Tablespoons olive oil

2 Tablespoons balsamic vinegar

5 cloves garlic, minced

1 teaspoon dried thyme

Salt and Pepper, to taste

2 Tablespoons chopped parsley leaves




1.Preheat oven to 375 degrees F. Generously grease a 9x13-inch baking pan with non-stick spray.

2.Place carrots in a single layer onto the prepared pan. Pour olive oil, balsamic vinegar, garlic and thyme over the carrots. Season with salt and pepper. Gently toss to combine.

3.Bake for 40 to 45 minutes or until tender.

4.Serve immediately, garnish with parsley and enjoy!
